Sauteed Kale


I have been loving kale lately and have seen it at the farmers market the last few weeks.   This Sautéed Kale is super easy and delicious.  This makes a great side dish to any meal.   I used a young kale, you may notice the leaves are smaller.   You can use any kale that you have.  This took me less than 20 minutes to put together.   I have been so busy this month so something quick is always appreciated.  Enjoy!



Sautéed Kale

Ingredients
1 large bunch of kale
2 to 3 tablespoons olive oil
2 to 3 cloves garlic, thinly sliced
1/2 onion, diced
¾ cup chicken stock
salt and pepper


Directions

Chop stems and leaves of kale.


Heat olive oil in a large saucepan over medium-high heat.

Add garlic and onions, cook until softened.  

Over high heat, add stock and kale to saucepan with garlic and onions.  Stir to combine.  Cover and cook for 5 minutes.

Remove cover and cook for additional 10-15 minutes until all the liquid has evaporated.   Stir occasionally.


Season with salt and pepper.

Serves 2 to 4.

Sauteed Sugar Snap Peas


These Sautéed Sugar Snap Peas are an easy weeknight side dish to make.  It literally took me 5 minutes and it is absolutely delicious.  I also love raw sugar snap peas dipped in hummus as a healthy snack.  I saw that they had sugar snap peas at the farmers market today too.  Enjoy!


Sautéed Sugar Snap Peas

Ingredients
½ to 1 pound sugar snap peas
½  teaspoon salt
½ teaspoon black pepper
1 to 2 tablespoons olive oil


Directions

Heat olive oil in a pan over medium-high heat.

Add in sugar snap peas, salt and black pepper.

Sauté for 3 to 4 minutes.

Serves 2 to 4.

Cheesey Mashed Potatoes


Who wouldn't love cheesey mashed potatoes?  These cheesey mashed potatoes were sooooo good and definitely cheesey.  I added both cream cheese and cheddar cheese.  I will definitely be making these cheesey mashed potatoes again.   I love how creamy these mashed potatoes were and the flavor of the all the cheeses really stands out.  Based on taste, I discovered that shredding the block of cheese yourself is so much better than the bagged pre-shredded cheese.  It really does make a difference and it was really quick with my box grater (or food processer with shredding blade if you need a lot of cheese).  Overall this is a great simple side dish and it went well with my Italian breaded pork chops.  Enjoy!


Cheesey Mashed Potatoes

Ingredients
2 large russet potatoes
½ cup milk (I used whole milk.)
2 ounces cream cheese
2 tablespoons butter
1 cup shredded cheddar cheese
½ teaspoon garlic, granulated or powder
salt and pepper to taste


Directions

Wash, peel and cube potatoes.

Place cubed potatoes in large pot and fill with cold water.


Cover and bring to boil over medium-high heat. Cook potatoes for about 30 minutes, or until easily pierced with a fork.

Drain potatoes and place them back into the pot. 

Mash potatoes with a fork (or if you have a potato masher) while mixing in milk, cream cheese, and butter.   Add in garlic, salt, and pepper.


Serves 4.

Easy Fried Rice


Whenever I'm hungry and want something quick, I can always count on this Easy Fried Rice.  It is one of my go-to-meals when I don't want to spend too much time cooking.  Somehow I always have leftover rice in the fridge - which is a key ingredient to fried rice.  If you use fresh rice, it will be too sticky so leftover rice is a must.  Fried rice is a chinese dish that is made with leftovers, so you can throw it in whatever you want.  Also if you don't have oyster sauce that is okay, you don't really need it, but I like it since my grandmother used to add it to her fried rice.  My grandmother passed away several years ago but I have some great memories of her making my brother and I her fried rice.  She would also add in diced chinese roast pork and chinese sausage to her fried rice, but that is not something I always have.   Hope you make this easy fried rice soon!



Easy Fried Rice

Ingredients
2 to 3 cups leftover rice
2 eggs
½ cup onions, diced
1 clove garlic, minced
1 cup frozen mixed vegetables
2 – 3 tablespoons low sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon vegetable oil


Directions

Heat oil in a large skillet (or wok) over medium-high heat.  Add onions and garlic.  Cook for a few minutes until onions are softened.


Next, stir in rice.  


Next, stir in vegetables and add in soy sauce and oyster sauce.


Add in one egg at a time and stir.  Allow egg to lightly scramble.


Continue stirring until eggs are completed cooked.


Serves 2.

Cilantro Lime Rice


This cilantro lime rice was super easy to make, especially if you have a rice cooker.  Throw all the ingredients into the rice cooker and press start, about 20 minutes later you have fully cooked rice!  I love this rice and it was a great side dish along my honey lime chicken with asparagus Enjoy!


Cilantro Lime Rice

Ingredients
2 cups white rice (I used jasmine.)
½ cup onion, finely diced
1 lime, juiced
1 tablespoon fresh cilantro, chopped
1 ½ cups chicken broth, low sodium
1 cup water


Directions

Rinse rice a few times until water runs clear.

Add rice to rice cooker. 

Next add in onion, lime juice, cilantro, chicken broth and water.  


Stir and cook rice according to rice cooker directions.


Serves 4.

Sophie in the Kitchen Latkes


Happy Hanukkah!  Hanukkah is also known as the Festival of lights and is a Jewish holiday.  This holiday is celebrated for eight days and nights and commemorates the re-dedication of the holy Temple in Jerusalem following the Jewish victory over the Syrian-Greeks.  The miracle of the oil that burned for eight days was that there was only enough oil to light the menorah for one day.  This great miracle that occurred is why food fried in oil like latkes (potato pancakes) and sufganiyot (doughnuts) are traditionally eaten.  I have made latkes annually for the last few years and this is exactly how I've made them each time.  I like mine served with sour cream and I now use plain greek yogurt instead of sour cream.  Also, I did a small batch with shredded carrots, these give a hint of sweetness which are delicious.  Enjoy!  Chag Sameach to my Jewish friends!



Sophie in the Kitchen Latkes

Ingredients
3 large russet potatoes, peeled and shredded
½ large onion, grated (or finely diced)
3 tablespoons flour
1 ½ teaspoons salt
3 eggs
vegetable oil (for frying)


Directions

Wash and scrub potatoes.  Peel potatoes and cut each potato into quarters.


Shred in food processor with shredding disc.   Place shredded potatoes in a bowl of cold water.  This allows the potato starch to settle in the bottom.  The water will turn brown.  (You can also use a box grater to shred potatoes if you don’t have a food processor.)

Grate onions with a box grater or if you are already using a food processer, place onion in food processer to finely dice.

Drain potatoes in a colander and press down.  I placed a paper towel on top of potatoes while pressing down to drain.  You can also place potatoes in a cheesecloth and wring well.   (*When you pour off the watery brown liquid in the bowl, save the layer of pale beige paste at the bottom.  This is potato starch, and it will help your latkes stick together.  Scrape up the paste, dump in the potato mixture!)


In a bowl, combine potatoes, onion, eggs, flour and salt.


Heat a large heavy-bottomed skillet (I used my dutch oven) over medium-high heat and add enough oil to cover skillet.

Place large spoonfuls of the potato mixture into the hot oil.  Cook for about 3 minutes or until golden brown on one side.

Flip latkes onto the other side to brown.  Press down to form a ¼ to ½ inch thick patty.  Cook for additional 3 minutes or until golden brown.

Place latkes on paper towel lined baking sheet to drain excess oil.

Serve hot with sour cream or applesauce.  (I use plain greek yogurt in place of sour cream.)

Makes about 30 latkes.

Creamy Mushroom and Artichoke Soup


This creamy mushroom and artichoke soup is one of my favorites.  It is a really easy soup to put together for either a meal or as a starter.  This soup can be really filling and is perfect for a light dinner or lunch.  I’ve been making this soup for a couple years now and everyone who has tried it so far enjoys it.   It has been crazy busy these last few days with Thanksgiving and now back to work.   Enjoy!


Creamy Mushroom and Artichoke Soup

Ingredients
½ cup onions, diced
1 cup mushrooms, diced (I used cremini mushrooms.)
½ cup artichoke hearts, diced
3 tablespoons butter
1 tablespooon cornstarch
4 cups chicken stock, low sodium
1 cup heavy cream (You may use half and half or milk.)
1 teaspoon salt
½ to 1 teaspoon black pepper


Directions

In a large pan, over medium heat, add butter, onions, and mushrooms.  Sauté until onions and mushrooms are tender, about 5 to 7 minutes.


Stir in diced artichokes.

In a small bowl, whisk together cornstarch with 1 cup chicken stock. 


Pour in cornstarch mixture.  Slowly add in remaining chicken stock.


Cover and allow to simmer on low for 30 minutes.

Next, stir in heavy cream.  Season with salt and pepper.


Serves 4 to 6.

Classic Green Bean Casserole


I really love green bean casserole for some reason; maybe it’s the crunchy fried onions or the cheese or both!  I adapted this recipe from Paula Deen's Green Bean Casserole recipe.   I saw the fried onion pieces from Trader Joe’s and used those instead of the usual French’s french fried onions.  I also used my homemade cream of mushroom soup, which is so much better than the canned condensed soup.   Overall this classic green bean casserole is perfect for a Thanksgiving side dish!


Classic Green Bean Casserole

Ingredients
2 cups green beans, sliced (from my local farmers’ market.)
2 tablespoons butter
1 tablespoon olive oil
½ cup onion, diced (I used a yellow onion.)
½ cup mushrooms, sliced (I used cremini mushrooms.)
2 cups cream of mushroom soup (I used homemade soup.)
1 cup french fried onions (I used Trader Joe’s.)
¼ teaspoon granulated garlic
¼ teaspoon salt
¼ teaspoon black pepper
1 cup shredded cheese (I used cheddar and Italian mix)


Directions

Preheat oven to 350 degrees F.  Grease an 8x8 inch baking dish with nonstick spray.

Bring a large pot of water to a boil and add green beans.  Boil for about 5 minutes and drain.


In a large pan, over medium heat, add butter and olive oil.  Add onions and mushrooms, sauté for about 5 minutes until softened and browned.  

Add in green beans to onions and mushrooms.


Stir in cream of mushroom soup.  Add in garlic, salt and pepper. 


Stir in ½ cup french fried onions.


Pour mixture into 8x8 inch baking dish.


Bake for 20 minutes.

Remove from oven and top with shredded cheese and remaining ½ cup French fried onions. 


Bake for additional 10 minutes or until cheese is melted.


Serves 6.
