Iced Pumpkin Cookies


My favorite season is fall and when I think of fall, I think of pumpkin!  These iced pumpkin cookies are so good!  I got the recipes from allrecipes.com (original recipe here) and based on the reviews, I didn't have to change anything.  These cookies are soft and have a cake-like texture, and they are absolutely delicious.  I shared these cookies at work and everyone loved them.  One coworker told me they taste just like Starbuck's pumpkin scones, but I haven't tried those.  However maybe I should make pumpkin scones next?  Enjoy!




Iced Pumpkin Cookies
Printable Recipe

Ingredients
2 ½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
½ teaspoon salt
½ cup butter, softened (1 stick)
1 ½ cups sugar
1 cup plain pumpkin puree
1 egg
1 teaspoon vanilla
Ingredients for Icing
2 cups powdered sugar
3 to 4 tablespoons milk
1 tablespoon butter, melted
1 teaspoon vanilla


Directions

Preheat oven to 350 degrees F.

In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.  Set aside.


In a stand mixer, beat softened butter and sugar together until light and fluffy.  Add in pumpkin, egg, and vanilla.


Slowly add in dry ingredients.


Drop on baking sheets by tablespoon and flatten slightly.


Bake for 15 to 17 minutes.  


Allow cookies to cool on cooling rack.


While cookies are cooling, prepare icing.  In a bowl, combine powdered sugar, milk, melted butter and vanilla.  Add additional milk if needed to obtain drizzling consistency.


Spoon a little icing on top of each cookie and spread with back of spoon or you can drizzle icing with a fork on each cookie.


Makes about 3 dozen.

Pumpkin Chocolate Chip Bread


I cannot get enough of pumpkin these days, and I have already made pumpkin cupcakes.  Since I made banana bread earlier, I adapted the recipe for this pumpkin chocolate chip bread.  This bread is moist, delicious and full of pumpkiny goodness!  Is pumpkiny even a word? LOL  This pumpkin chocolate chip bread is perfect for breakfast and I had a slice today with my morning latte.  I also shared the bread with some of my coworkers and everyone enjoyed it.  It is nice that I get to share my baked goods at work because I should not be eating it all myself!



Pumpkin Chocolate Chip Bread

Ingredients
¾ cup pumpkin
4 tablespoons butter, melted (I microwave in a bowl for about 45 seconds.)
½ cup white sugar
¼ cup brown sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt
1 ½ cup flour
½ cup chocolate chips


Directions

Preheat oven to 350 degrees F.  Spray a loaf pan with non-stick cooking spray.

In a large mixing bowl, whisk together baking soda, salt, flour and cinnamon.


In another bowl, combine pumpkin, butter, sugars, egg and vanilla.


Combine the wet ingredients in with the dry ingredients.

Stir in chocolate chips.

Pour batter into greased loaf pan.  Bake for one hour or until a toothpick inserted comes out clean.

Peanut Butter Pumpkin Puppy Cake


Happy Birthday Ellie! 


I can't believe Ellie is 4 years old today, I remember when she was just a puppy so that's why I made her a peanut butter pumpkin puppy cake.  I modified this recipe from the cake I made for Buddy's 10th birthday.  I know these dogs are spoiled!  Ellie is so lucky today because she is also featured on Pretty Fluffy's Daily Fluffy - http://prettyfluffy.com/2012/08/daily-fluffy-look-at-this-mess/!  How cool is that?  Ellie sure can be a troublemaker sometimes but I love her anyway (and so does her brother Buddy).


Peanut Butter Pumpkin Puppy Cake

Ingredients
1 cup flour
1 teaspoon baking soda
¼ cup peanut butter, natural
1/8 cup vegetable oil
½ cup applesauce
½ cup pumpkin puree
1 egg

For the Frosting
½ cup greek yogurt, plain
dog treats for decoration

 
Directions

Preheat oven to 350 degrees F.  Grease an 8x4 inch loaf pan.

In a bowl, whisk together the flour and baking soda.

Add in the remaining ingredients and mix with a spatula.

 
Pour batter into loaf pan.  Bake for 30 minutes or until a toothpick inserted into center comes out clean.

 
Cool on a wire rack.  (I cut the cake into the shape of a dog bone with a serrated knife.)



 
Cool completely before frosting.

Frost with plain greek yogurt.  Top with dog treats.




Ellie loves it and so does Buddy!
