Stir Fry Sesame Beef Noodles

I am addicted to these sesame noodles and adding steak and bell peppers gives it a little something extra.  This tasted amazing and was simple to make.  I love getting to use my wok since I don't use it often enough.  Stir fries are quick and easy but the key is to prep first.  I already had pre-sliced bell peppers to dip with homemade hummus.  The leftover stir fry sesame beef noodles also tasted great!  Enjoy!



Stir Fry Sesame Beef Noodles

Ingredients
½ pound beef sirloin steak, cut 1 inch thick
½ pound linguine pasta
¼ cup soy sauce
2 tablespoons sugar
4 cloves garlic, minced
2 tablespoons rice vinegar
3 tablespoons toasted sesame oil
4 tablespoons vegetable oil
2 green onions, thinly sliced
1 cup red and/or green bell peppers, sliced
salt and pepper to taste


Directions

Place steak in freezer.  Cook pasta according to package directions.  Drain well.


Meanwhile, in a bowl, whisk together soy sauce, sugar, garlic, rice vinegar, sesame oil, vegetable oil and ½ the sliced green onions. 


Cut the cold steak across the grain into thin slices.  Toss with sesame sauce.



In a wok (or large skillet) on medium-high heat, add in ½ the sesame sauce with beef and bell peppers.  Cook for 5 to 7 minutes.  Add salt and pepper to taste.  Continue to stir while cooking. 




Add in linguine pasta and stir in remaining sesame sauce.  Cook for 1 minute. Top with remaining green onions.  



Serves 2 to 4.

Mustard Maple Chicken

I am personally not a huge fan of mustard but I am a fan of this mustard maple chicken.  This is such a quick and flavorful dish.  It is very similar to honey mustard sauce.  I adapted my recipe from Food Network's Ellie Krieger recipe for Maple-Mustard Chicken Thighs . You can basically use any type of chicken, if you have chicken thighs instead of chicken breasts, it would still be fine.  You just need to adjust the cooking time, usually a little longer for chicken thighs.  I served the mustard maple chicken with saffron rice (recipe here) and sauteed kale.  Make sure you spoon that extra sauce from the baking dish over the chicken. 


 
Mustard Maple Chicken

Ingredients
1 ½ pounds chicken breast
½ cup dijon mustard
¼ cup maple syrup
1 tablespoon rice vinegar
salt and pepper to taste

 
Directions

Preheat oven to 425 degrees F.

Lightly grease a 9x13 inch baking dish.

 
In a small bowl, combine mustard, syrup and vinegar.



Season chicken breasts with salt and pepper to taste.  Place chicken in greased baking dish.

 
Pour the mustard maple mixture over the chicken.   Turn chicken breasts over to fully coat with mustard maple mixture.



Bake for 30 minutes.  Turn chicken breasts halfway through.   Bake until chicken is no longer pink and juices run clear.

 
Let cool for 10 minutes before serving.


Serves 4-6.

Sesame Noodles


I could not eat enough of these sesame noodles!  I ate two bowls :)  This recipe is so easy to make and only took me about 20 minutes to put together including cooking the pasta.  These sesame noodles would make a great side dish but you could add some chicken or other protein to make it a main dish.  The sesame sauce is so addicting too, you need to make this dish ASAP!  I also used toasted sesame oil from Trader Joe's but you could also use regular sesame oil.  You should be able to find most of the ingredients in your regular grocery store or asian market if not.  Feel free to add a little chili oil if you want some kick to the noodles.   Enjoy!


Sesame Noodles

Ingredients
1 pound linguine pasta
¼ cup soy sauce
2 tablespoons sugar
4 cloves garlic, minced
2 tablespoons rice vinegar
3 tablespoons toasted sesame oil
4 tablespoons vegetable oil
1 bunch green onions, thinly sliced

Directions

Cook pasta according to package directions.  Drain well.



In a bowl, whisk together soy sauce, sugar, garlic, rice vinegar, sesame oil, and vegetable oil. 


Pour sesame sauce over warm noodles.  Toss to coat.  Top with green onions and toss to mix.


Serves 4 to 6.

Green Chopsticks Potstickers

I am always a sucker for samples at Costco.  If I try something I like at Costco, I end up buying it.  That’s how I ended up with these Green Chopsticks frozen potstickers.  They are fully cooked and only takes a few minutes to heat up.  According to the package, they are all natural with no preservatives or MSG added.  I choose the savory pork gyoza dumplings.
They are filled with the following listed ingredients:
Savory Pork
Onion
Shiitake Mushroom
Sweet Potato Noodle
Leek
Garlic
Ginger
Here are the directions of various ways to heat the frozen potstickers:
Boil – Heat water to a rapid boil and place dumplings into the boiling water for approximately 1 to 2 minutes.
Fry – Heat 2 teaspoons of oil in frying pan.  Heat approximately 2 to 3 minutes or until golden brown.
Microwave – Cover with a damp paper towel and heat on high for 1 to 2 minutes or until hot.
I choose to pan fry a few of them, just be careful of any hot oil splashing!
I made a simple dipping sauce with just soy sauce, rice vinegar and some thinly sliced scallions.  You can also add grated ginger, minced garlic or even sesame oil to your dipping sauce.   
This could be an easy light dinner, or an appetizer/snack. 
I hope you can find these in the frozen section of your Costco too!
